Montague Estate Cabernet Sauvignon 2023
Cabernet Sauvignon from two estate blocks was hand-picked almost a month apart, on March 16 and April 14, 2022. After being crushed and de-stemmed, the grapes were inoculated with cultured yeast and malolactic bacteria, then gently plunged for 7 to 10 days until dry. The wine was pressed into new (25%) and seasoned French oak, matured for 19 months, and blended with small amounts of Malbec and Cabernet Franc before bottling in October 2023.
The nose offers gentle wafts of cedar cigar box, blackberry briar, and hints of black pepper, sumac, and mocha. The palate features black cherries, dark plum, and blackberries, seamlessly intertwined with notes of graphite, violet, and olive tapenade.
