L'Octavin Hip Hip J Savagnin Macerated Magnum
The Savagnin grapes for this wine were purchased by Alice from another Jura producer whose vines are currently undergoing conversion to organic with Agriculture Biologique.
The previous vintage that we had which used the Savagnin was combined with Chardonnay, however this year there was enough Savagnin to create a cuvée just from Savagnin.
The grapes were left as whole bunches and allowed to macerate for 2 months. They were then pressed and the juice transferred to a tank where it underwent natural fermentation, followed by 6 months of maturation prior to bottling in June 2021.
The result is a truly delicious wine with a long finish and a nuttiness showing through from the Savagnin.
