The hand-picked fruit, showing varied ripeness, was chilled overnight, hand-sorted, lightly cold-pressed, and a small portion was destemmed and cold-soaked for added texture. The juice underwent a wild fermentation, with no malolactic fermentation, and was bottled unfiltered with fortnightly lees stirring. The result is a wine tasting of pink grapefruit, coconut, passionfruit, passiona, pavlova, and lime.
