Sauvignon Blanc from a 1ha parcel in St. Satur. The vines are 50 years old on average and grown on soils with a high content of silex. 50% botrytis. Aged for 36 months in old barrels. Zero SO2.
Sea side, oyster, ginger and cumquat spray. Herbaceous if you sniff deep, but not like Les Quarterons. This is more of a beast that unravels itself over an evening. It feels a bit young in the beginning, but give it some time in the glass or a decant. Much more power here than some of the other cuvées.
It’s a food wine for sure – the food enhances its components. The acidity is so good, as is the tension, and the length is insane. It’s full of mandarin in the mouth. So much spicy ginger on the nose too, with lots of asian spices. The aromas then become quite saline later on, what a shapeshifter! Apricot pastry and brown sugar. Palate is so fresh and clean, and the texture is supple. More minerality today, with herbs and orange cake, and a long, long finish. This will age well. Superb.
